Beurre noisette and chive whipped potatoes, fennel demi glace, and horseradish crème fraîche

Golden potato and wild boar bacon gratin, beet demi, and smoked garlic purée

Pistachio Crusted Steelhead Trout

Crab and thyme whipped potatoes, lemon cream sauce, and caper vinaigrette

Grilled Pork Tenderloin

Sweet potato pecan tartlet, maple crème fraîche, medjool date demi
